In today’s episode of The Plant Trainers Podcast we talk to Kim Matthews, the ultrarunner from Run, Eat, World. Kim was not always a runner, as you will learn in this interview, nor was she always eating a plant-based diet. Just like all of us, she is on a journey. Kim is an Australian ultra trail runner currently living in Ho Chi Minh City, Vietnam. She began running in 2008 by signing up for a local 5km event with her husband and has not looked back.
Over the years her distances gradually increased, before finally completing a marathon in 2014. After a six month break to go traveling in 2015, she returned to Australia with two goals: to switch from a vegetarian diet to a plant-based lifestyle and to complete an ultramarathon. The first goal was easy, much easier than expected. The second goal was achieved three months later, a 50 km trail race in Victoria, Australia. This was Kim’s first win in a running event.
One month after the 50 km race Kim and her husband moved to Bangkok, Thailand, where her love for trails and traveling continued to grow. They spent 18 months there before relocating to Vietnam. Since arriving in South East Asia Kim has finished 15 races, 10 of these being ultramarathons. She has been awarded first place in 14 of these races. Her biggest accomplishment to date is being crowned the Asia Trail Master champion of 2017. Kim attributes her success to hard work, luck and, of course, a healthy diet.
